In 2019 around the time my wife was pregnant with our first child, I was diagnosed with a gluten allergy. With beer out, I started exploring what else was out there. Cider was naturally an appealing alternative but the problem was most I'd have on tap at a bar was too sweet and sugary seeming. I couldn't have more than one without feeling gross after. In talking with other people, my experience wasn't unique. Sometimes I wondered if I could make something better, half kidding. Living on the pond was great for a lot of reasons but extra space was not of them, so I'd laugh it off and move on.
Fast forward a couple of years and couple of kids later, we moved to a new house just four miles up the road that was from 1857 along with a 3 story, 40 foot tall barn and all. The bottom of the barn was in rough shape: old run down horse stalls and dirt floors, but I couldn't help but think how that space could be transformed into something special. A lot of discussion and dreaming later, we realized this could be the perfect opportunity to make that cider I had wished for: Dry, no sugar added. Natural tasting, yet flavorful.
